What is Chashu? An evolved, Chinese dish of barbecued pork called “Char Siu”, the Japanese took it and made it a perfection of its own. It’s simmered pork, which just simply melts in your mouth and disappears. | What is Tsukemen? It’s like a ‘deconstructed Ramen’, to quote a person I admire, which is possibly the best explanation for a Tsukemen. The soup is separate and is more flavorful than the soup in Ramen. It also has a darker color and a full bodied taste and texture. |
Discovering ‘Chashu’ I’ve always heard the phrase, “the meat just melts in your mouth!” But I have never really had it happen to me at all. It was a food experience that I honestly did not expect to happen as most of the time, I do get really tender steaks, chicken, seafood and what have you but it never really ‘melts’. Sure it's so soft it's wonderful, and you know the cook is perfect but this literally does softly and rather gracefully disappears from your mouth and you REALLY HAVE TO take another bite/piece. |
